Established in 2007 as a derivative yet core piece of DINR, the Greener DINR restaurants set out to create a collaborative environment in which to share their wants, experiences, and ultimately their ideals in furthering sustainable opportunities within our restaurants. The idea is simple, and as quite often reciprocates, brilliant. Take the numerous opportunities that can make an environmental impact and focus on solely one at a time. Each month brings a new focus, resulting in a new found way of finding a more local ingredient, a resuable coaster, efficient equipment, composting!!!, and beyond. The bottom line: aspiration and action in creating a restaurant environment in Denver that sets the bar in environmentally conscious action. Here's how it's working: - 12 DINR restaurants (and growing!) pledged to focus each month on a certain level of sustainability
- Collaborating with the EPA, Greenprint Denver, Mile High Alliance, and numerous others, a charter established full endorsement and excitement in this opportunity.
- Since inception, 9 restaurants have establsihed composting and/or recycling projects in their facilities, with 5 actively working to complete the effort!
- Every restaurant is a member of Energy Star & Waste Wise
- Worked with the Department of Health in Denver to create a Green Restaurant Certification Program
- In collaboration with the Denver Zoo, participates in Do at the Zoo, with a portion of proceeds benefiting a pilot restaurant compost project
- Worked with the Denver Visitors Bureau in restaurant weeks geared towards "Green" restaurants
- Helped establish and then continue each month with Lights Out Lunch, a monthly lunch where lights are shut off to demonstrate efficient lighting opportunities
- Further solidified: Local produce, local purveyors, decreased waste, responsible use
